Comté, vin jaune and waterfalls, in limestone folds along the Swiss border.
The Jura is a long fold of limestone with the Swiss border on its crest, and it is quietly one of the best places to eat in France. Comté is matured for up to three years in cellars you can visit, and vin jaune is aged six years and three months under a veil of yeast, like sherry but without the fortification. The Hérisson falls drop through beech woods in seven stages, Baume-les-Messieurs sits at the end of a blind valley, and in winter the plateau is France’s cross-country skiing heartland.
